“Salade Sofia” re-invented

10th anniversary special. 🎉🥂

This recipe evokes memories of a time that seems to be a century ago, or another long-forgotten past life...

I learned to make “Salade Sofia" in primary school. A time when school was supposed to prepare us for the world of adulthood, equipped with all the necessary tools, like the basics of cooking (and... uh... netting and sewing). 

For the 10th anniversary of posting this recipe on my professional website, I decided to update the recipe. This time, I made it with all the berries from the garden. This year, they are bursting with flavour and I can’t get enough. Only the kiwi fruits and açaí berry purée are (organic) from the store. My mint is also celebrating its 15th birthday!

Despite having a website since 2000, the internet was not what it is now, and I still had to insert the AOL CD to dial in. If you’re over 40, you know what I am talking about. That would make you the fantastic Gen Z, right? That makes us so very special.

Salade Sofia

"Salade Sofia” is, in basic terms, a fruit salad tossed in yoghurt and sweetened to taste. My original twist involves the use of zero dairy products and real SuperFoods. 

RECIPE (serves 4)

1 Punnet Blueberries
1 Punnet Strawberries
2 Kiwi fruits
1 Pomegranate
1 fermented coconut yoghurt
1 Tbsp açaí powder (or purée)
Mint Leaves

  1. Wash berries thoroughly, and cut strawberries into wedges. Peel the kiwi and cut into eight pieces (cut in half, then into four pieces each).

  2. Place them together in a bowl and add the coconut yoghurt and Açaí Powder. Mix gently and serve on a bed of yoghurt.

  3. Add shredded Mint Leaves for freshness.
