Super Healthy Paleo/Keto Nut Porridge

This grain-free porridge is very easy to prepare. It also tastes unbelievably delicious — a great way to start your day and maintain energy levels well into lunchtime.

If you follow a ketogenic diet as recommended by “Energise - 30 Days to Vitality,” you may want to eat this delicious breakfast around 10:00 or 11:00 in the morning (depending on your eating window and the time you eat lunch and dinner). The good part is that it will supply a constant supply of energy and you won’t feel desperate for a coffee for another stimulant.

The recipe is also great when prepared in advance, for example, made in the evening and reheated in the morning, or made in batch so you have enough for three days.

To reheat, add a little water or homemade nut milk.

 

Recipe (serves 2)

200 ml water (or nut milk or horchata de chufas*)
35 g cashews
25 g almonds
25 g hazelnut
20 g butter
10 g macadamia nuts
(or 10 g pecan nuts)
1 banana
​1 apple
2 tbsp milled sprouted linseeds
2 tbsp hemp seeds (for paleo option)
1 date (optional)
or 1 tbsp maple syrup (optional)
1/4 tsp cinnamon

Method:

  1. Gently melt the apple with butter and cinnamon (and maple syrup of you are not using the date), until nicely coloured (about 7-10 minutes)

  1. During this time, quickly break the nuts into small pieces using your food processor or blender. You can also use a large chef's knife if you prefer. 

  2. Transfer the nut mixture to the apples.

  3. Using the same blender/food processor, blitz the pitted date with the water/milk. Pour the liquid into the pan with the apple and nuts mixture and stir until well combined.

  4. Add the banana broken into a few pieces.

  5. Bring to a boil, then simmer for 15-20 minutes, until the consistency of regular porridge is reached. 

Tip: Replace stewed apples with berries (fresh or frozen) and the maple syrup with raw honey if you prefer.

* Horchata de chufas, is also known as tigernut milk, one of my favourite milk for it is extremely rich in resistant starch, making horchata de chufas an extremely gut friendly alternative to junk nut and plant-based milk available in supermarket.

I ONLY use organic chufas, which I pre-soak for 12 hours, and blitz with filtered water using my high-powered blender.
