Once every blue moon, and every so often, one needs a treat, and today I wanted to treat myself with something sweet but no sickening-sweet. Just the perfect touch to prevent a blood sugar rush and crash, which will, without the shadow of a doubt, damage my so very damaged current sleeping pattern.
I wanted to pop the remaining of the popcorn bag, but it was not going to satisfy my sweet tooth. In my family, popcorn is with homemade caramel... Not toffee. And most certainly not salt. To me it is as bad as a salted coffee (for those who know what it is for...). Therefore, I decided to make Popcorn Granola, and let me tell you, it was a massive discovery. Simply amazing!!! Once I popped the corn, I switched off the heat and sprinkled 1 teaspoon of brown caster sugar over the popped corn, let it melt and stirred to coat the corn, and then sprinkled with seeds mix (Sunflower, Pumpkin and Sesame), and some hulled Hemp Seeds for extra protein and good fat (= Fuller for Longer!). I stirred the mix very gently and the seeds started to agglutinate together and to the popcorn, and the corn was a lot crunchier and much lighter. Not the one you get from a bag or at the cinema for sure! And it was just sweet enough. and the lightly-toasted seeds gave a smoky aroma, that was very pleasurable. Made my evening such a success and this felt truly like a treat. All the while, very healthy, and I can say, did not disturb much my blood sugar balance. Although, I must say I wanted more... If only I had more corn, and the torrential rain had moved on, I would have run to health store down the road. But then again, it was a treat. and I was satisfied enough. Just being greedy, that's all! When is the next movie night....???!!!
