"Salad Sofia" in basic terms in a fruit salad tossed in yogurt, and sweeten to taste. My original twist involves the use of zero dairy product and of real SuperFoods.
RECIPE (serves 4)
1 Punnet Blueberries
1 Punnet Strawberries
2 Kiwi fruits
1 Fermented Coconut Yoghurt
1 Tbsp Açaì Powder
Wash berries thoroughly, and cut strawberries in wedges. Peel the kiwi and cut into 8 pieces (cut in half then in 4 pieces each).
Place together in a bowl, and add the coconut yoghurt and Açaì Powder. Mix gently and served.
Add shredded Mint Leaves for freshness.
