Who said you could not enjoy your everyday little pleasures when grains are an issue and gluten a time-bomb?
It does not matter what diet you follow. This recipe is able to fit in perfectly, not matter your dietary requirements or the trend you are currently following. Suitable for Raw, Vegetarians, Vegans, and True Paleo. Add more chia seeds if you want to reduce the sugar-content and add less dates. Equipment: food processor, oven tray, kitchen bowl. Preparation time: 10 minutes Resting time: 2 Hours Recipe: 50 g Date (pitted, chopped) 30 g Hazelnuts 25 g Chia seeds (freshly ground or whole) 15 g Macadamias 4 tbsp Desiccated Coconut (from your homemade coconut milk) 2 tbsp Raw Cocoa Nibs 1 tsp Vanilla (powder or extract) ¼ tsp grey Sea (Celtic) Salt 1. Using a food processor (or high-powered blender) blend all ingredients, except the vanilla if you are using extract. 2. When the mix starts breaking down add the vanilla, or if you have used vanilla powder, then add 1 tsp of fresh water. 3. Transfer the mix into a non-bleached parchment/ greaseproof paper lined-oven tray. Spread and flatten the mix until evenly layered. Place another sheet above to cover and refrigerate at least for 2 hours. 4. Cut to size. They might remain sticky, so you can wrap them individually in parchment paper. Store in airtight container in the fridge. Eat within 4 days.
