These energy bars are pure delights and surpass any mass-produced options that you find in your usual health stores or Organic Supermarket. They are also easy to make.
The matcha green tea and the fat and high protein content (making you fuller-for-longer) make these bars a fantastic guilt-free pick-me-up snack, with only a glycaemic load of 8.
INGREDIENTS (for 8 bars)
25 g Coconut Oil
1 tsp Coconut Butter (or Almond Butter, etc.) – refrigerated overnight
3 tbsp Chia Seeds
100 ml full fat coconut milk (refrigerated overnight, and scoop the hardened part)
¼ tsp Matcha Green Tea (+ ½ Tsp for sprinkling)
¼ tsp ground Cinnamon
1 tbsp Raw Whey Protein
1 tsp Pure Vanilla Powder (or Extract)
50 g White Chocolate (to sweeten. Melt on bain-marie with vanilla, then scoop with silicon spatula)
or 2 tbsp Agave (or Brown Rice) Syrup
2 handful Oat Flakes (or ground flax/linseeds)
1 handful Goji Berries
3 tbsp Coconut (or almond) Flour
You can also make the bars without the Oat Flakes if you wish to not have grains.
Cut, using a sharp knife (passed quickly under hot water – for a neater cut), 8 bars of identical size. Dip the sides in the remaining Rice Flour-Matcha on the parchment sheet.
Keep refrigerated. You can wrap each bar in parchment paper.
