Vegan Paleo Chia Seed Breakfast

This recipe could not be easier to make. And yet, it packs a massive punch when it comes to antioxidants and the good stuff that your gut is craving.
Prepare in the evening if you prefer, but it is also possible to eat it as soon as it is ready (all liquid is absorbed and the mixture is holding together and appears creamy). 
Recipe (serves 2)

100 ml coconut water
100 g frozen açaí berry pulp (or 1 heaped tsp powder)
4 tbsp coconut yoghurt (2 each serving)

25 g chia seeds
25 g milled sprouted linseeds
15 g hemp seeds (hulled)
2 tbsp wild Alaskan blueberries (frozen)
1 tbsp cocoa powder
1 tbsp pumpkin seeds
half tsp grated ginger. 



  1. ​Place all ingredients in a large mixing bowl, except the yoghurt. 
  2. Mix the ingredients together until well combined. You may wait for a little while before stirring again, as the seeds are absorbing the liquid. If the mixture becomes too thick you may want to add a little more coconut water. 
  3. Keep in your fridge overnight or serve. 
  4. Top with yoghurt and some fresh or frozen berries, nuts and seeds.

Healthy Plant-Power Matcha Latte. 

On a hot summer day, it makes sense to keep cool and hydrated.
With so much choice, like ice coffee latte, lemonade, or cordial-flavoured iced water, and so many stores and coffee shops sell a wide variation of these, with the hefty price (an a multitude of additives, preservatives, colourings, and about anything to keep the raw product as cheap as possible), it may be difficult to choose a healthy option, especially if you have a favourite ready-made drink. I know i had... But not anymore... 
Current events and my personal distancing from coffee shops have made me more resolute to prepare the drinks I like but using healthier and delicious unprocessed raw ingredients -- except for the tea, that is. Although it is premium organic Japanese tea collected by hand. 

All you need to make a delicious matcha latte is matcha green tea powder, some nuts, water and a glass, and ice of course. 
Use 1 heaped scoop (or 1/3 of a teaspoon) of matcha green tea. Place the tea powder in a ceramic bowl and add just enough boiled hot water (80˚c) to dilute it. Whisk energetically until the beverage foams at the top. Pour the tea in the jug of your high-speed blender and add ice cubes, about 6 cashews (or 12 hazelnuts, or 2 heaped tablespoons of oats, or 8 almonds, or 100 ml full-fat coconut, soy or cow's milk) with 500 ml water. Blend until smooth. 
You can pass the latte through a chinois etamine or strainer, but I recommend not to, unless your blender is not powerful enough to pulverise nuts.
​Make the milk separately if it is easier and then add it to the recipe as indicated. 

Drink immediately or pour into a stainless steel flask and enjoy in your own time, slowly and mindfully, like I am doing right now, seating in the garden and enjoying the little sun we have had so far this year...
