Vegan Paleo Chia Seed Breakfast

This recipe could not be easier to make. And yet, it packs a massive punch when it comes to antioxidants and the good stuff that your gut is craving.
Prepare in the evening if you prefer, but it is also possible to eat it as soon as it is ready (all liquid is absorbed and the mixture is holding together and appears creamy). 
Recipe (serves 2)

100 ml coconut water
100 g frozen açaí berry pulp (or 1 heaped tsp powder)
4 tbsp coconut yoghurt (2 each serving)

25 g chia seeds
25 g milled sprouted linseeds
15 g hemp seeds (hulled)
2 tbsp wild Alaskan blueberries (frozen)
1 tbsp cocoa powder
1 tbsp pumpkin seeds
half tsp grated ginger. 



  1. ​Place all ingredients in a large mixing bowl, except the yoghurt. 
  2. Mix the ingredients together until well combined. You may wait for a little while before stirring again, as the seeds are absorbing the liquid. If the mixture becomes too thick you may want to add a little more coconut water. 
  3. Keep in your fridge overnight or serve. 
  4. Top with yoghurt and some fresh or frozen berries, nuts and seeds.

   It is that time of the year again, when we have 4 seasons in one day, when we think of taking all the summer clothes out of the back of the wardrobe, organising picnics and barbecue, finally able to socialise again with yet again another long bank holiday weekend. But the sun may be with us on some days but temperatures, for the most of us, are still close to freezing in the wee hours of the morning. During the day, temperatures are still timid and comfort may only be what we need to warm up. 

   Tajine is one of my favourite dishes. It can be extremely delicious if done properly, and the perfect comfort food on a cold evening. I was inspired by Traditional Moroccan Couscous and using nutrition knowledges I decided to add Sweet Potatoes to increase antioxidant levels such as Beta-carotene, Spices with the highest ORAC and Thermogenic spices such as Ginger and Chilli, Paprika, and Cayenne (increase natural body heat production).
   Try my original recipe, and let the goodness warm you right at the core.
