This recipe brings memories of what it seems a century ago, or another long-forgotten past life...
I learned to make "Salade Sofia" when I was in primary school. A time when school was supposed to prepare us for the world of adulthood, equipped with all the necessary tools, like the basic of cooking (and... uh... netting and sewing).

Readers who have followed me for all these past years, will all agree that I am an advocator of mindful eating and chewing food properly. I have written an extensive article chewing in my Spring Edition - Part 2 (2013): "To Chew or Not To Chew - That is the question… Is it really important and how long should we chew for?”

I thought this needed a much clearer update.

Avocado (and chia seeds) brings texture and thickness, while kale, kiwi, and pink grapefruit peel quench your body with powerful antioxidants; “Essentials” phytonutrients and minerals including magnesium (from brassicas), vital for most body processes including liver detoxification phase 1 and phase 2.
If you add the protein-rich chia seeds, you will assist your liver in deactivating dangerous metabolic waste from phase 1, and produce bile for excretion via the bowel.

Dairy-Free Saffron Seafood Risotto with Rock Lobster Tail

Surprisingly light and fluffy, the way a risotto should be –not under-cooked with starchy-like taste or porridge-like, which seems are the only alternatives when eating out – is easier to achieve than what you are led to believe, especially if like me you make a point to never choose risotto from a restaurant menu.

Could you swap your morning latte for green tea?

26/7/2015

Matcha has a caffeine kick but it is packed with key antioxidants. You won't get the jitters you experience when drinking coffee. How about that?

The main reason why matcha green tea cannot be confused with or even compared to any other teas, ranking so high on the ORAC table (antioxidant effect on the body), is very simple: unlike other teas, which usually are sold in sachets and have to be steeped in hot water, matcha green tea is the entire leaf, reduced to a fine powder.

Unlike an infusion – the usual way to drink a normal cup of tea – the entire benefits of the antioxidants contained in the leaf are released. From a tea bag, the water only manages to infuse/extract 10% of the beneficial compounds.

Generally, I am not one to write  “emotional”  statements (as so many bloggers naturally do), be too personal in a comment, or even promote any material, brand, company or person.

All of my writing is always backed up either by the most current research appearing in medical journals or sourced from trusted authors in the field of nutrition, or human medicine.

Having read Food is Better Medicine than Drugs, from Patrick Holford, one of the most influential leading Nutrition expert of our generation and the author of more than 30 books, I thought that sharing some extracts with you was appropriate.

Probably the best ice-cream you will ever taste.

Even though it is hard to remain impartial, but there are times in a chef's life that a recipe magically appears in his mind and it won't rest until he achieve what he has envisioned.
Not only the ice-cream taste amazing the blend of flavours, texture is beyond words.
I am so pleased that I had some for breakfast today! Well, better than an espresso shot... Right!
